Description
These savory bubble waffles are a delicious twist on breakfast. Made with cheddar cheese, chives, and crisp bacon, they’re perfect as a sandwich or served with toppings.
Ingredients
¾ cup all-purpose flour
1 tsp baking powder
1 tsp cornstarch
⅛ tsp salt
⅛ tsp black pepper
1 egg
2 tbsp sugar
⅓ cup milk
⅓ cup water
2 tbsp unsalted butter, melted
2 tbsp chopped chives
2 oz. cheddar cheese (grated)
2 tbsp mayonnaise
1 tomato
2 lettuce leaves
6 slices crispy bacon
Instructions
1. Whisk flour, baking powder, cornstarch, salt, and pepper in a bowl. Add egg, sugar, milk, and water.
2. Grate cheese and chop chives, then mix them into the batter.
3. Whisk in melted butter until smooth.
4. Spray waffle pan with oil and preheat over medium heat for 3 minutes.
5. Pour ¾ cup of batter into pan, fill bubbles, and flip. Cook 2–3 minutes.
6. Flip back and cook 1–2 minutes until golden brown. Rest for 1 minute.
7. Spread mayonnaise on one side of each waffle.
8. Layer bacon, tomato, and lettuce. Top with second waffle.
9. Cut into quarters and serve.
Notes
Use finely grated cheese for best texture.
You can swap bacon for turkey or veggie bacon.
Try adding herbs like dill or rosemary.
