Here’s a healthy version of a longtime favorite. This recipe, with this lowfat ingredients, shows that you can have your French toast and eat it, too!

2 1/2 cups of Whole-Grain Total cereal
2 eggs or 1/2 cup fat-free egg product
3/4 cup orange juice
1/4 teaspoon salt
10 slices (1 inch thick) whole-grain or regular French bread

1. Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet. In a shallow bowl, place crushed cereal; set aside. In medium bowl, beat eggs, orange juice and salt with wire whisk until well blended.

2. Spray griddle or 12-inch skillet with cooking spray; heat to 350°F or over medium heat. Dip each slice of bread into egg mixture, turning to coat both sides; coat with cereal. Place on griddle; cook 4 to 6 minutes, turning once, until golden brown on both sides.

Tips: For an alternate method, preheat oven to 450°F. Place in a greased pan and bake 5 to 8 min. or until golden brown. Turn bread; bake 3 to 5 minutes longer or until golden brown.

“Though I stay busy working as a nurse’s aide for the elderly, I find time to cook and write down my favorite recipes to share this coffee cake is easy to make and so good.”

Ingredients
coffeecake:
1/2 cup solid vegetable shortening
1 cup sugar
two eggs
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1 tablespoon baking powder
2/3 cup milk
2 cups fresh or frozen blueberries

Topping:
2/3 cup sugar
2/3 cup flour
1/2 cup butter or margarine
1/4 teaspoon almond extract

Preparation Instructions
Preheat the oven to 350°. Lightly grease and flour 29 inch round baking pans. For the coffeecake, be the shortening and sugar together until light and fluffy in a large mixing bowl. Add the eggs and vanilla. Beat well. In another bowl stir together the flour and baking powder. Add this alternately with the milk to the egg mixture. When smooth, divide the batter between the two baking pans. Spoon 1 cup blueberries over the batter in each pan

For the topping, combine the sugar, flour, butter, and almond extract and mix until crumbly. Sprinkle over the blueberries. Bake for about 35 min., or until the center is cooked. Cool slightly and cut into wedges.

Tips from our test kitchen:
This delicious coffeecake is also good with a light glaze flavored with almond extract.
